arguably the two worst pop-tart flavors… but these homemade bites might’ve changed my mind. 🍓🍪✨ pop-tarts raised me. lol. they were my go-to snack hopping off the bus, but let’s be honest… they were loaded with sugar & didn’t offer much in the way of protein or fiber. 😅 so i gave them a little protein-packed, no-sugar, gluten-free, fiber-boosted glow-up & turned them into bite-sized treats! i made TWO versions: 🍫 brown sugar cinnamon — a chocolate cinnamon sugar protein filling tucked inside a cinnamon toast protein cereal crust, then finished with a protein glaze. 🍓 mixed berry — filled with a sweet + tangy mixed berry compote, then topped with a strawberry protein glaze + rainbow sprinkles. same nostalgic pop-tart vibes, but with more protein + fiber & ingredients you can feel good about. 🤌 perfect for an after-school snack, afternoon sweet treat, or whenever the pop-tart craving hits.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

crust

  1. preheat oven to 350.
  2. choose your cereal or protein bar of choice, then add to a food processor & grind into a “flour”.
  3. add nut butter + water to crust & mix well.
  4. add 1 t to 2, 24 cup mini silicon muffin tin.
  5. freeze 1 of the muffin tins for ~10 minutes - this will be the top crust.
  6. filling:
  7. choose which filling you want to make.
  8. chocolate cinnamon sugar: to a bowl, add all filling ingredients, then microwave for 30 seconds.
  9. mixed berry filling: make my mixed berry compote & cool completely before adding.
  10. add a little less than a teaspoon of filling on top of crust.
  11. remove 2nd muffin tin from the freezer & add other crust piece on top.
  12. bake for 13-15 minutes.
  13. protein glaze:
  14. in a bowl, whisk together powdered monk fruit, protein powder of choice, & water.
  15. let cool completely, before frosting with protein glaze.
  16. add glaze on top of pop-tart (add sprinkles for mixed berry version).
  17. allow to completely set in the fridge, then pop out of muffin tins & enjoy!
