this is the ultimate better-for-you glow-up to the mcdonald’s pancake mcgriddle. 🥞✨
fluffy greek yogurt protein pancakes sandwich a protein-packed personal omelet (that can even sneak in ancestral organ meats if you’re feeling frisky 😉) + a swipe of your favorite jam for the perfect sweet + savory bite.

Ingredients
- greek yogurt protein pancakes & waffles (click for recipe)
- 111 Egg, for each sandwich
- 1 Tbsp1 Tbsp1 Tbsp Cottage Cheese, for each sandwich
- Salt and Pepper
- Ancestral Beef Stick - Archer Jerky, or meat of choice

- oven-baked bacon (click for recipe), or meat of choice
- Parmesan Cheese, or cheese of choice

- Blueberry Superfood Jam - Smash Foods, or jam flavor of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first, make a batch of my protein pancakes (I made them into ~3.5" discs using a non-stick egg ring).
- for each sandwich, whisk together 1 egg, 1 T cottage cheese, & salt + pepper.
- to a skillet, pour whisked egg mixture into a non-stick egg ring.
- add in any meats + cheeses you like (I added ancestral organ meat sticks, bacon, & parmesan cheese).
- pour a little water into the pan, then cover with a lid & cook until egg is set.
- to build your sandwich, add 1 pancake to a skillet, then layer on jam (flavor of choice) → loaded egg bite → another pancake.
- repeat to build as many pancakes as you like.
- to meal prep: build all sandwiches → place on a baking sheet → freeze → place in a freezer safe bag once completely frozen.
- to reheat: thaw overnight → air-fry for 10-15 minutes OR pan-fry for 2-3 minutes each side to crisp up.
- serve with any of your favorite sides (fruit, granola, etc.)
