Chicken Fajita Stuffed Potatoes

Ingredients
- 6 whole6 whole6 whole Russet Potatoes, baked
- 1 lb1 lb1 lb Ground Chicken
- 3 Tbsp3 Tbsp3 Tbsp Fajita Seasoning
- 3 whole3 whole3 whole Bell Pepper, seeded and sliced
- 1 whole1 whole1 whole Yellow Onion, sliced
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1 whole1 whole1 whole Lime, sliced
- 0.5 bunch0.5 bunch0.5 bunch Cilantro, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In large saute pan heat oil
- Add peppers and onions & saute till tender, move to plate
- Add chicken & spice & cook till no longer pink
- Add peppers & onions back to pan, stirring to combine
- Add cilantro & stir in
- Spoon mixture over hot baked potatoes
- Garnish with limes & more cilantro if desired
- Enjoy!
