Lentil Patties
These lentil patties hide zucchini, carrots, peas and corn, and they bake rather than fry. Start them the day before: the split red lentils need three to four hours of soaking, or overnight, and there is no shortcut. You make your own breadcrumbs by blitzing two slices of whole wheat bread, then blend the lentils with the zucchini and carrots until nothing is recognizable. Twenty to twenty-five minutes at 400F, turning them at fifteen.
