Feta & White Bean Burger (Edit recipe)

These feta white bean burgers are cannellini beans mashed with caramelized onion, wilted collard greens and crumbled feta — a veggie burger that holds together without a binder out of a box. They get cooked twice: golden in the skillet first, then fifteen minutes a side in a 375F oven. That second stage is what firms up the middle, so don’t skip it and serve them straight from the pan. Let the onion and greens cool before they meet the egg.

  1. In a large skillet, heat oil and saute onions until caramelized. Add in collard greens and saute until wilted.
  2. Mash beans in a large bowl. Add in red peppers, seasoning, egg, bread crumbs, feta, and cooled onion/collard green mixture. Mix well.
  3. Form 8 patties with the mixture. Add oil to the heated skillet. Cook patties on each side until golden.
  4. Set your oven to 375F. Spray patties with olive oil. Put patties on a tin foil lined baking tray. Bake for 15 min, flip, and bake for an additional 15 minutes until golden. Enjoy!

Notes
