These dairy free chewy s’mores granola bars are sweetened with Lakanto brown sugar monkfruit for an even healthier spin on a childhood favorite snack. Summer is s’mores season, so I figured there was no better way to honor that with this easy healthy summer snack!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium bowl, add your Lakanto, honey, peanut butter, and butter.
  2. Microwave for 45 seconds, stir, and microwave for another 30 seconds.
  3. Add your marshmallows and microwave for 30 more seconds.
  4. Stir until marshmallows are almost fully combined.
  5. Add in your dry ingredients and stir until completely combined.
  6. Press into a loaf pan or small baking dish and let cool at room temperature or in the fridge for 1+ hours.
  7. Optional to top with crumbled graham crackers!
