Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare the rice according to the instructions on the bag.
- In a medium size saute pan, brown the ground pork over medium heat. If your pork releases a lot of juices, let those cook off before adding the onion.
- Add the diced onion to the pan, and stir together with the pork.
- Add in the minced garlic, and stir together with the pork and onions.
- Allow the pork, onions, and garlic to saute until the onions become translucent. Be sure to stir often so that the onions and garlic do not burn.
- Season the pork with the Citrus Stir Fry Seasoning.
- Pour in the coconut aminos, and stir to combine.
- Pour in the toasted sesame oil, and stir to combine.
- Season with a pinch of Himalayan pink salt.
- Add in the cole slaw mix (shredded green and purple cabbage and carrot), and stir to combine with the meat mixture.
- Allow this to cook until the cabbage becomes soft. Turn the heat down to low, and let it simmer while you prepare the eggs.
- Fry two or more eggs, seasoning with cracked black pepper, red pepper flakes, and a pinch of pink salt.
- When the eggs have finished cooking, scoop the rice into a bowl, top with the meat mixture, a fried egg, and garnish with sesame seeds and sliced green onion.
