Grain-Free Gnocchi Alla Sorrentina (Edit recipe)

Gnocchi Alla Sorrentina is a classic dish from the small coastal town of Sorrento, near Naples, Italy. This is a healthified version of one of our favorite Italian dishes, and certainly won't disappoint!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Marinara Sauce

  1. Sautee onion, fresh garlic, dry basil and dry oregano in olive oil on high heat until translucent and the garlic starts to brown on the edges.
  2. Pour in chicken broth and simmer until liquid is reduced by half. Add the tomatoes, salt, pepper additional garlic and simmer over low heat with the lid partially covered to allow steam to escape for approximately 15 minutes stirring occasionally.
  3. Add fresh basil during the final minutes of cooking.

Put It All Together

  1. Brown sausage until golden brown
  2. Once the sausage is browned, add in marinara sauce and spinach, and cook until spinach is wilted. Turn the burner down to low and let sauce lightly simmer.
  3. Cook gnocchi according to package
  4. Once done, add gnocchi to a bowl, spoon over the sauce, and mix until well combined.
  5. OPTIONAL: If adding cheese, put gnocchi and sauce into an oven-safe bowl, add the cheese, and let it sit under the broiler until cheese is bubbling.
