Hearty Hamburger Soup
It is definitely not a secret that my love of soup runs deep! Did you know I have over 35 soup recipes and counting? This Hearty Hamburger Soup is one of the most popular soups on instagram and with good reason! It is loaded with veggies and ready in less than and hour so you can make this any day of the week! The family will love this recipe and they will be looking for the dill pickles! They make a fun garnish!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 1 cup1 cup1 cup Onion, diced
- 333 Carrots, diced
- 2 whole2 whole2 whole White Potatoes, large, peel & dice
- 1 whole1 whole1 whole Bell Pepper, diced
- 2 Tbsp2 Tbsp2 Tbsp Ghee
- 5 oz5 oz5 oz Kale, chopped
- 0.5 cup0.5 cup0.5 cup Nutritional Yeast
- 15 oz15 oz15 oz Diced Tomatoes
- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste
- 4 cups4 cups4 cups Beef Bone Broth, or beef broth
- 1 cup1 cup1 cup Coconut Cream
- 1 tsp1 tsp1 tsp dried Dill
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt ghee in a large pot
- Add onion, pepper & carrots cooking till onions are soft
- Add beef & cook till browning
- Add broth, tomatoes, tomato paste, potatoes & spice
- Bring to a boil then reduce heat & simmer for 10 minutes
- Add nutritional yeast, stirring to combine
- Add coconut cream, stirring to combine
- Add kale & stir till wilted
- Garnish with dill pickle slices if desired
