Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
  2. Place the bacon in a single layer on the parchment-lined sheet pan and bake for 10 minutes.
  3. Remove the bacon from the oven. It should start to render the fat, but not be crispy.
  4. Pat the shrimp dry with a paper towel and sprinkle with pepper.
  5. Cut the bacon in thirds and wrap each piece around one shrimp. You can use a toothpick to hold the bacon in place or wrap the bacon tightly.
  6. Add a cooling rack to the bacon sheet pan and place the bacon-wrapped shrimp on the cooling rack.
  7. Baste the shrimp with honey.
  8. Place the sheet pan with the shrimp in the oven and bake for 10-12 minutes. The shrimp should be cooked, and the bacon should be crispy.
  9. Drizzle the shrimp with more honey before serving.
