Pork & Sweet Potato Chili
Do you love chili all year round? I sure do! This Pork & Sweet Potato Chili is rich and hearty and everything a chili should be! It is loaded with veggies and delicious, good for you bone broth and makes a big batch so there will be plenty of leftovers for lunches during the week.
Ingredients
- 2 lb2 lb2 lb Pork Loin, cut in bite size pieces

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 1 cup1 cup1 cup Onion, diced
- 3 pieces3 pieces3 pieces Celery, diced
- 1 whole1 whole1 whole Green Bell Pepper, diced small
- 3 cups3 cups3 cups Sweet Potato
- 1 whole1 whole1 whole Jalapeño Pepper, diced, leave seeds for more heat
- 15.5 oz15.5 oz15.5 oz Fire Roasted Diced Tomatoes

- 12 oz12 oz12 oz Salsa, of choice
- 16.9 oz16.9 oz16.9 oz Chicken Bone Broth

- 2 Tbsp2 Tbsp2 Tbsp Tomato Paste

- 1 tsp1 tsp1 tsp Salt

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 Tbsp1 Tbsp1 Tbsp Cumin, Ground

- 0.5 bunch0.5 bunch0.5 bunch Cilantro, chopped

- 2 whole2 whole2 whole Green Onion (Scallion), sliced for garnish

- 1 whole1 whole1 whole Avocado, sliced for garnish

- Heat oil
- Add onions & celery & cook till onions are translucent
- Add bell peppers, stir one minute
- Add pork & cook till no longer pink
- Add sweet potatoes, diced tomatoes, salsa, tomato paste. broth, jalapeño & spice
- Increase heat & bring to a boil
- Lower heat & simmer 15 minutes
- Add cilantro, stir well
- Serve with garnishes
