Salsa Verde Soup
How many times have you made pork shoulder or roast and have wound up with a ton of shredded pork leftover? I know I have and that is what inspired this amazing Pork & Tomatillo Salsa Soup! Having only five ingredients and ready in no time it has so much flavor and is simply a delicious and cozy bowl full of soup that the whole family will love!
Ingredients
- 4 cups4 cups4 cups Pork Shoulder, or pork roast or butt - see notes
- 4 cups4 cups4 cups Sweet Potato, diced
- 14.5 oz14.5 oz14.5 oz Fire-Roasted, Muir Glen brand Diced Tomatoes
- 12 oz12 oz12 oz Tomatillo Salsa (click for recipe), I like Trader Joe's Roasted Tomatillo Salsa
- 32 oz32 oz32 oz Chicken Bone Broth, or chicken broth - see notes

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place sweet potatoes in a large pot
- Pour broth over and bring to a boil
- Lower heat and simmer on a low boil for 10 minutes
- Add pork to pot
- Add diced tomatoes to pot
- Add salsa to pot
- Simmer for 15 minutes
- Enjoy!
Notes
Pork shoulder should be pre cooked and shredded I used Kettle & Fire Bone Broth and each box is 16.9 oz so it is a little extra broth which is fine
