red, white, & blue berry cheesecake protein waffles
these festive 4th of july protein waffles are a great way to start your holiday!
Ingredients
protein waffles
- 1 cup1 cup1 cup One Degree Organic Oats, ground into oat flour
- 0.25 cup0.25 cup0.25 cup Coconut Flour
- 2 Tbsp2 Tbsp2 Tbsp ground Psyllium husk, or ground chia/flax seeds
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Baking Powder
- 0.25 tsp0.25 tsp0.25 tsp Redmond Real Salt
- 1 cup1 cup1 cup Plain Greek Yogurt, or cottage cheese
- 222 Egg
- 1 tsp1 tsp1 tsp Primal Palate Vanilla Extract
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water
- 0.5 cup0.5 cup0.5 cup Blueberries, or any berries
berry compote
- 2 cup2 cup2 cup Frozen Raspberries, or any berries
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, or tapioca starch - mixed w/ ~1 Tbsp water
"cheesecake" frosting
- 0.5 cup0.5 cup0.5 cup Low-Fat Cottage Cheese, or greek yogurt
- 0.25 cup0.25 cup0.25 cup Sugar Free White Chocolate Chips, melted
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Cashew Butter
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Primal Palate Vanilla Extract

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large bowl, combine flour, psyllium husk, protein powder, sweetener, baking powder, & salt.
- in a separate bowl, whisk together greek yogurt (if using cottage cheese, use a food processor), eggs, milk or water, & vanilla extract.
- add liquid ingredients to dry ingredients; mix together & add 1 tablespoon of water at a time until reaches desired consistency.
- allow batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
- heat a waffle iron & grease with a little butter or oil.
- add ~½ cup batter into waffle-iron & a few blueberries.
- cook until waffles are crisp, ~3-4 minutes.
- to a sauce pan, add all berry sauce ingredients & bring to a boil.
- reduce sauce to a simmer for 10-15 minutes or until in thickens.
- in a food processor, combine “cheesecake” frosting ingredients.
- drizzle berry sauce & cheesecake frosting on top of waffles.
- I served mine with an omelet for an extra protein punch!
