Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a large bowl, combine flour, psyllium husk, protein powder, sweetener, baking powder, & salt.
  2. in a separate bowl, whisk together greek yogurt (if using cottage cheese, use a food processor), eggs, milk or water, & vanilla extract.
  3. add liquid ingredients to dry ingredients; mix together & add 1 tablespoon of water at a time until reaches desired consistency.
  4. allow batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
  5. heat a waffle iron & grease with a little butter or oil.
  6. add ~½ cup batter into waffle-iron & a few blueberries.
  7. cook until waffles are crisp, ~3-4 minutes.
  8. to a sauce pan, add all berry sauce ingredients & bring to a boil.
  9. reduce sauce to a simmer for 10-15 minutes or until in thickens.
  10. in a food processor, combine “cheesecake” frosting ingredients.
  11. drizzle berry sauce & cheesecake frosting on top of waffles.
  12. I served mine with an omelet for an extra protein punch!
