Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the olive oil and Mesa de Vida starter sauce to a cold skillet. Turn the heat up to medium high and cook until fragrant and simmering. (This prevents the oil and sauce from spattering.)
  2. Stir in the crushed tomatoes and salt to taste. Simmer for 2 minutes.
  3. Crack the eggs into a bowl, then pour into the simmering sauce. Gently use a spoon to stir through the egg white to allow the sauce to come up between each egg.
  4. Season the eggs with salt and pepper. Cover lower the heat to medium low, cook to your desired doneness.
  5. Sprinkle with cheese if desired and serve immediately with bread (sourdough, pita, lavash, tortillas, etc.) rubbed with a fresh garlic clove, or over polenta.
