Shredded Brussels Apples & Pecan Salad
I love Brussels so much I decided it was time to create a cold salad and this Shredded Brussels, Apple & Pecan Salad with a dreamy "Honey" Dijon Dressing did not disappoint! I do believe I could live off this one. It ticks all the boxes having crunch, tang, sweet and did I mention crunch?! This is a great salad to make ahead as it is even better the second day and perfect for all your summer gatherings!
Ingredients
- 1 lb1 lb1 lb Brussels Sprouts, shredded, see note
- 2 cups2 cups2 cups Red Cabbage, shredded
- 0.5 cup0.5 cup0.5 cup Red Onion, diced
- 1 whole1 whole1 whole Apple, Pink Lady, cored & cubed
- 0.5 cup0.5 cup0.5 cup Dried Cranberries, Unsweetened

- 1 cup1 cup1 cup Pecans

- 1 tsp1 tsp1 tsp Ghee

- 1 pinch1 pinch1 pinch Salt

- 1 cup1 cup1 cup Avocado Oil Mayonnaise

- 6 whole6 whole6 whole Medjool Dates, pitted & diced

- 3 Tbsp3 Tbsp3 Tbsp Dijon Mustard

- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar

- 1 pinch1 pinch1 pinch Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Toast pecans in melted ghee for about 5 minutes
- Sprinkle with pinch of salt and set aside to cool
- In a large bowl combine Brussels, cabbage, apples, onion, cranberries and pecans, tossing well
- Combine dressing ingredients in high speed blender till smooth and creamy
- Pour over salad and toss well
