slow cooker marry me chicken chili
who doesn't love coming home from a long day of work with dinner already made for you? the crockpot truly is MVP of winter. this soup is a twist on the classic marry me chicken (which is popping off everywhere) & a good ole bowl of chili. sprinkle some parm crisps & croutons on top & your taste buds will be thanking you for the hard work you put in (:
Ingredients
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 8-16 oz8-16 oz8-16 oz Baby Bella Mushrooms, sliced
- 5 oz5 oz5 oz Kale, chopped
- 30 oz30 oz30 oz Chickpeas, drained & rinsed
- 1/2 cup1/2 cup1/2 cup Sun-Dried Tomatoes, finely chopped
- 2 lb2 lb2 lb Chicken Breasts, Boneless Skinless, cut into 1/2-1" cubes
- 1.5 cup1.5 cup1.5 cup Coconut Milk
- 4 cup4 cup4 cup Chicken Bone Broth
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Arrowroot Flour, mixed in 1-2 T of water
- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast
- 2 Tbsp2 Tbsp2 Tbsp Amore [Italian] Seasoning - Primal Palate
- 1 cup1 cup1 cup Cottage Cheese, blended
- 4 oz4 oz4 oz Parmesan Cheese

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first saute peppers, onions, & mushrooms in a skillet (or instant pot) for 8-10 minutes.
- add kale to veggies; cook until wilted.
- transfer cooked veggies to a slow cooker (or keep in the instant pot), then add in all ingredients except the cottage cheese & parmesan.
- cook on high for 3-4 hours or low for 6-8 hours OR until the chicken is cooked through (if using whole chicken breast, shred right before cooking).
- with ~20-30 minutes left in cooking time, mix in cottage cheese & parmesan cheese.
- serve with parm croutons & any other toppings of choice.
