Slow Cooker Moroccan Lamb (Low-Carb, Paleo, Whole30)
Lamb, spices, and a few vegetables are all you need for this simple and healthy slow cooker recipe. Together these ingredients will bring the flavors of Morocco to your kitchen. I found two lamb shoulder chops from my local grocery store. I usually use a lamb roast but I thought I’d switch it up a bit. If you can’t find lamb shoulder chops then you can substitute regular lamb shoulder, lamb roast, or even beef.
Ingredients
- 2 lb2 lb2 lb Lamb Shoulder Chop
- .25 lb.25 lb.25 lb Carrots, chopped
- .25 cup.25 cup.25 cup Onion, sliced
- .25 cup.25 cup.25 cup Mint Leaves, chopped
- .25 cup.25 cup.25 cup Chicken Broth (Low Sodium), or low-sodium beef broth
- 1 tsp1 tsp1 tsp ground Ginger
- 1 tsp1 tsp1 tsp Ground Cumin, ground
- 1 tsp1 tsp1 tsp Turmeric Powder
- 1 tsp1 tsp1 tsp Paprika
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Red Pepper Flakes
- 1/2 tsp1/2 tsp1/2 tsp Ground Cinnamon
- 1/2 tsp1/2 tsp1/2 tsp ground Coriander
- 1/2 tsp1/2 tsp1/2 tsp ground Nutmeg
- 1/2 tsp1/2 tsp1/2 tsp ground Cloves
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 1/2 tsp1/2 tsp1/2 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pour broth into the bottom of the slow cooker.
- Mix together Moroccan spice rub in a small box. Press 2 tbsp of the spice rub firmly all over the lamb shoulder meat.
- Add lamb and vegetables to the slow cooker.
- Top with fresh mint.
- Cook HIGH 3-4 hours or LOW 6-8.
