Buffalo Chicken Meatballs
Fun fact! I was not a fan of anything spicy before I started Whole30 in 2018. Now I cant get enough of all things spicy including these Buffalo Chicken Meatballs! They are made in the air fryer and done in 12 minutes! The family will devour these so I highly recommend making a double batch. We like to make Buffalo Bowls with a spinach salad and oven fries on the side!
Ingredients
- 1 lb1 lb1 lb Ground Chicken

- 1 whole1 whole1 whole Egg
- 0.5 cup0.5 cup0.5 cup Almond Meal

- 1 tsp1 tsp1 tsp Salt

- 1 tsp1 tsp1 tsp Onion Powder

- 0.5 cup0.5 cup0.5 cup Zero Sugar Medium Buffalo Sauce - Noble Made

- 2 Tbsp2 Tbsp2 Tbsp Ghee

- 1 whole1 whole1 whole Avocado Oil Spray

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, whisk egg and add almond flour, salt, onion powder and 1/4 cup hot sauce, mixing well.
- Add chicken and mix well.
- Form into nice sized meatballs. (I made 14)
- Spray air fryer basket.
- Place meatballs in not touching. May need to do in batches.
- Spray meatballs with oil.
- Set air fryer to 375 and cook for 12 minutes.
- Meanwhile in a saucepan, heat remaining hot sauce with ghee.
- Toss cooked meatballs in sauce.
- Enjoy!
