stuffed with protein + fiber, full of flavor, & ready in about 10 minutes! these are baked until crispy & golden, then dipped in a creamy greek yogurt bang bang sauce for the perfect sweet + spicy finish!
Ingredients
greek yogurt "bang bang" sauce
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Barrel Aged Tamari Soy Sauce - Jozo, for the sweet chili sauce

- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos, for the sweet chili sauce
- 1/4 cup1/4 cup1/4 cup Chili Garlic Sauce, for the sweet chili sauce
- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto, for the sweet chili sauce

- 2 Tbsp2 Tbsp2 Tbsp Rice Wine Vinegar, for the sweet chili sauce
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste, for the sweet chili sauce

- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, for the sweet chili sauce, mixed in a little bit of water + extra water to thin sauce
- 1/4 cup1/4 cup1/4 cup Sriracha

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- optional: first make your own sweet chili sauce, by combining all ingredients listed for it - you may skip this step & buy a store-bought GF/SF option.
- make your greek yogurt “bang bang” sauce, by mixing greek yogurt + sweet chili sauce + sriracha.
- to a plate, whisk eggs.
- gather all ingredients & set up a large cutting board or work surface.
- mix your chicken with a couple scoops of greek yogurt “bang bang” sauce.
- submerge 2 sheets of rice paper into the egg wash until completely coated.
- transfer rice paper to your cutting board, then layer palmini noodles → veggies → bang bang chicken → edamame.
- fold the bottom edge over the filling, fold in the sides, then tightly roll to create a spring roll.
- sprinkle with sesame seeds & place on a baking sheet.
- repeat with remaining rice paper wrappers & fillings.
- bake for 20-25 minutes, flipping halfway through.
- dip spring roll in greek yogurt “bang bang” sauce & enjoy!
