sushi + spring rolls + burritos = YUM! 🍣🌯✨ this giant sushi spring roll burrito combines all my favorite things into one fresh, flavor-packed bite. it’s high protein, naturally gluten-free, LOADED with fresh ingredients, & the perfect (easy) way to switch up sushi night.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first, gather all ingredients.
  2. cook & cool your rice.
  3. make wasabi avocado “cream cheese” by adding all ingredients to a food processor & blending well.
  4. mix together all ingredients for spicy greek yogurt mayo, then mix a little with seafood of choice.
  5. chop up any fruits & veggies you like.
  6. set up a large cutting board or work surface.
  7. fill a shallow bowl or pie plate with cool water.
  8. submerge a single sheet of rice paper into the water for 3-5 seconds.
  9. transfer 2 rice papers to your cutting board with 1 sheet of nori in the middle.
  10. layer on your rice → wasabi avocado “cream cheese” → spicy greek yogurt “mayo” mixed with seafood → any fruits & veggies you like.
  11. fold the bottom edge over the filling, fold in the sides, then tightly roll to create a large burrito.
  12. cut in half & enjoy!
  13. serve extra wasabi avocado "cream cheese" with your favorite chips or veggies!
