sushi spring roll burrito
sushi + spring rolls + burritos = YUM! 🍣🌯✨
this giant sushi spring roll burrito combines all my favorite things into one fresh, flavor-packed bite. it’s high protein, naturally gluten-free, LOADED with fresh ingredients, & the perfect (easy) way to switch up sushi night.
Ingredients
wasabi avocado "cream cheese"
- 1 cup1 cup1 cup Avocado
- 1 cup1 cup1 cup Cottage Cheese
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 2 Tbsp2 Tbsp2 Tbsp Capers, the juice
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste, optional

- 2 Tbsp2 Tbsp2 Tbsp Lemon, juice + zest

- 1/2 tsp1/2 tsp1/2 tsp Wasabi Powder
- Salt and Pepper, to taste
spicy greek yogurt “mayo”
- 1/4 cup1/4 cup1/4 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen

- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 Tbsp1/2 Tbsp1/2 Tbsp Lime Juice
- 1/4 tsp1/4 tsp1/4 tsp Smoked Paprika, or chipotle powder
- Salt and Pepper, to taste
other ingredients
- Rice Paper Wrappers
- Nori Seaweed

- cilantro-lime cauliflower rice (click for recipe), may use palmini rice in place of cauliflower rice
- Lump Crab Meat, or seafood of choice
- English Cucumber, diced, may sub any veggie
- Radish, diced, may sub any veggie
- Mango, diced, may sub any fruit
- Pineapple, diced, may sub any fruit
- Cilantro, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first, gather all ingredients.
- cook & cool your rice.
- make wasabi avocado “cream cheese” by adding all ingredients to a food processor & blending well.
- mix together all ingredients for spicy greek yogurt mayo, then mix a little with seafood of choice.
- chop up any fruits & veggies you like.
- set up a large cutting board or work surface.
- fill a shallow bowl or pie plate with cool water.
- submerge a single sheet of rice paper into the water for 3-5 seconds.
- transfer 2 rice papers to your cutting board with 1 sheet of nori in the middle.
- layer on your rice → wasabi avocado “cream cheese” → spicy greek yogurt “mayo” mixed with seafood → any fruits & veggies you like.
- fold the bottom edge over the filling, fold in the sides, then tightly roll to create a large burrito.
- cut in half & enjoy!
- serve extra wasabi avocado "cream cheese" with your favorite chips or veggies!
