this mixed berry chocolate chip cookie cobbler is a warm, gooey skillet situation that basically tastes like summer in every bite.
juicy mixed berries + jam mixed with a generous amount of chocolate chips (because there’s no such thing as too many chocolate chips here) then gets topped with my homemade protein cookie dough for the most delicious cobbler situation. 😌
baked until soft, gooey, chocolate-studded, fruity, & beyond divine.
Ingredients
fruit filling
- 2 cups2 cups2 cups Frozen Mixed Berries, may sub any berry or fruit of choice
- 1/4 cup1/4 cup1/4 cup Very Berry Superfood Jam - Smash Foods, may sub any flavor OR add extra berries + 2 T ground chia seeds if don't have jam
- 1/4 cup1/4 cup1/4 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1 tsp1 tsp1 tsp Lemon Juice
- 1/2 tsp1/2 tsp1/2 tsp Pure Vanilla Extract

- 1/4 tsp1/4 tsp1/4 tsp Sea Salt

- Sugar-Free Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my instructions for making brown butter cookies, omitting any add-ins.
- place cookie dough in refrigerator for 30 minutes.
- preheat oven to 350.
- to a bowl, add all ingredients for fruit filling; mix well.
- to a mini cast iron skillet, add ~½ cup of fruit filling, then sprinkle on as many dark chocolate chips as your heart desires (I recommend a lot!)
- using a 1 tsp cookie scoop, add 6 scoops of cookie dough on top of each skillet (spacing them out evenly).
- bake cookie skillets for ~14-16 minutes or until cookies are golden brown on top.
- serve with cottage cheese ice-cream or whatever sounds good on top!
