Whole30 Pesto
Basil Pesto is one of the easiest ways to use up the abundance of basil growing in your garden. This pesto is elevated by toasting the pine nuts to a beautiful golden brown. A few other ingredients like garlic and fresh lemon and you are on your way to making a delicious pesto that is ready in 10 minutes! I love tossing this pesto with pasta and serving grilled chicken over it. It's also delicious over tomato slices with fresh mozzarella. The possibilities are endless for this delicious and bright sauce!
Ingredients
- 2 cups2 cups2 cups fresh Basil, packed tightly
- 0.5 cup0.5 cup0.5 cup Extra Virgin Olive Oil
- 0.5 cup0.5 cup0.5 cup Pine Nuts
- 3 cloves3 cloves3 cloves Garlic, peeled
- 0.25 cup0.25 cup0.25 cup Lemon Juice, fresh squeezed
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Nutritional Yeast

- Toast the pine nuts in a dry skillet for a couple of minutes till browning, tossing frequently and watching closely so as not to burn them
- Add all ingredients to high speed blender and blend to desired consistency
- I like it creamier but its just as delicious when left a little coarser
