love recreating restaurant bowls at home… & of course upgrading them! 🥗🍯✨ this one is inspired by sweetgreen’s hot honey chicken plate, but i added a few easy swaps to make it my own—juicy blackened chicken, herby low-carb rice, crunchy citrus slaw, sweet potato chips instead of roasted potatoes, crispy onion chips, & a creamy greek yogurt hot honey mustard sauce. it has all the sweet, spicy, savory, crunchy goodness you want from a restaurant bowl, but with simple ingredients you can easily throw together at home. high-protein, veggie-packed, naturally gluten-free, & perfect for an easy weeknight dinner or meal prep. restaurant favorite → homemade glow-up. 🤌✨

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

herbed rice

  1. make a batch of my cilantro-lime rice, but sub for any fresh herbs you have on hand.

blackened chicken

  1. preheat oven to 425.
  2. pat your chicken thighs dry, then rub with blackened seasoning.
  3. in a large pan, sear thighs on both sides.
  4. transfer the chicken to a baking dish (if your pan isn't oven safe) & add remaining ingredients.
  5. bake the chicken for 15-20 minutes or until reaches internal temperature of 165.
  6. let the chicken rest for 10 minutes (this allows all the juices to evenly distribute), then slice & dice.

citrus slaw

  1. preheat oven to 400.
  2. optional: preheat oven to 400, then add cabbage to a sheet pan & roast for 20-25 minutes.
  3. to a bowl, add cooled cabbage & remaining ingredients for slaw.
  4. refrigerate for at least 1 hour before serving to allow flavors to marinate.

building your bowl

  1. make the dressing, by adding all ingredients to a bowl & whisk until smooth. add a little water, if needed, to reach desired consistency.
  2. to build your bowl, start with a big scoop of herbed rice → blackened chicken → citrus slaw → sweet potato chips OR roasted sweet potatoes → crispy onion chips OR finely diced onions → side of dressing to drizzle on top & enjoy!
