Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. add cottage cheese to a cheese cloth & strain out as much liquid as possible.
  2. put the strained cottage cheese in a bowl, then mash the curds.
  3. to the cottage cheese, whisk in the eggs, vanilla extract.
  4. in a separate bowl, combine protein powder, monk fruit, psyllium husk, paleo flour, baking powder, & salt.
  5. add liquid to dry ingredients & fold together.
  6. separate the dough into 12 equal portions, then add equal amounts of blueberries & chocolate chips to each portion.
  7. form into 12 hockey pucks & flatten to ¼”.
  8. heat a pan over low-medium heat & add oil/butter to the pan.
  9. add pancakes to pan & cook for 4-5 minutes/side or until golden brown.
  10. in a food processor, combine frosting ingredients; refrigerate until ready to serve.
  11. top pancakes with frosting & any other toppings of choice when serving (I had extra fruit & a sausage link).
