This grain-free coffee cake is soft, fluffy and perfectly delicious! Made without any grain or gluten, this coffee cake is also refined sugar-free, but no one will guess that it's good for you!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350 degrees and line an 8x8 pan with parchment paper.
  2. In a bowl, combine cinnamon swirl ingredients. Set aside.
  3. In another bowl, whisk together eggs, applesauce, sugar, maple syrup and vanilla extract.
  4. Stir in almond flour, baking powder, baking soda and cinnamon.
  5. Spread half of batter into prepared baking pan, then sprinkle cinnamon sugar mixture over top.
  6. Cover cinnamon layer with remaining batter.
  7. In a bowl, combine topping ingredients. Sprinkle topping over top of batter.
  8. Bake coffee cake for 25 minutes or until toothpick comes out clean.
  9. Once cake has cooled, slice into squares.
