What could be better than sweet and sticky and finger licking good grilled mango chicken? These thighs are marinated over night in the most delicious mango marinade for the best flavor and then take 15 minutes to grill and they are on the table! I have made these several times already and David eats 3 thighs every single time! I love to make one of my coleslaw recipes to serve on the side. I have several to choose from! Your whole family is going to love these and the best part....if you are lucky enough to have leftovers they are amazing sliced up and put on a salad for lunch the next day!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine in a blender, mangos, coconut aminos, ketchup, garlic, ginger, salt, pepper & chili flakes till smooth
  2. Place chicken thighs in a zip lock bag and pour marinade over and marinate over night for best flavor
  3. Heat grill to 400°.
  4. Cook chicken 5-7 minutes per side or till thickest part reaches 165 degrees on a thermometer
  5. Plate with fresh mango slices or Mango Salsa
  6. Garnish with chopped cilantro & lime wedges if desired
