Ingredients
hummus dip
- 1/2 cup1/2 cup1/2 cup Powdered Hummus Mix - Prest, I used the lemon dill flavor
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Cucumber Lemon Balsamic Vinegar - Kosterina

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Water, as needed to reach desired consistency

- mini protein flatbreads (click for recipe)
- Sardines, Canned

- Cucumber Lemon Balsamic Vinegar - Kosterina

- Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- Powdered Hummus Mix - Prest

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first, make my homemade mini protein flatbreads.
- increase oven temperature to 400.
- make the hummus dip, by adding all ingredients to a bowl & whisk until smooth. add a little water, if needed, to reach desired consistency.
- drain & pat dry your canned sardines.
- brush your sardines with a generous amount of vinegar, then sprinkle with a mix of monk fruit & powdered hummus mix; bake for 15-20 minutes.
- add hummus dip on top flatbread, then layer on veggies of choice, crispy sardines, feta, & herbs.
- option to eat as is or bake flatbreads for ~5-6 minutes to crisp up more!
Notes
- quick "pickled" red onions:
- 1 red onion, finely sliced + 1/2 cup beet kvass + 1/2 cup water + 1/4 cup golden monk fruit
- Ā in a bowl combine all ingredients & refrigerate for at least 30 minutes before serving.
