French Onion Meatloaf (Edit recipe)

This French Onion Meatloaf is to die for! A little secret....David does not like meatloaf at all but he had 2 helpings of this and said it was the best meatloaf he ever had! I think I may have a winner here! He even asked for leftovers! It does take a little longer because you have to caramelize the onions but you have to trust me here, it is so worth it! I cant wait for you to try it!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Caramelized Onions:

  1. Melt ghee in large pan
  2. Add oil
  3. Add onions, salt, thyme & balsamic
  4. Cook over med high heat till onions soften, tossing every few minutes so they don’t brown
  5. Cover and turn to medium heat
  6. Stirring every 5 minutes till they become caramelized. Takes about an hour

Meat Loaf:

  1. Preheat oven to 350°F.
  2. Combine all ingredients in a large bowl mixing well
  3. Shape into loaf shape and place in roasting pan
  4. Bake 1 hour

Caramelized Onion Sauce

  1. Add to remaining onions, broth, coconut cream, coconut aminos, garlic, salt, pepper & Dijon
  2. Bring to a slow boil then reduce heat and let simmer till it begins to thicken
  3. Add arrowroot slurry if needed
  4. Serve over meatloaf slices
