Mini Sourdough Date Graham Cracker Ice Cream Sandwiches
These mini ice cream sandwiches are made with soft, lightly sweetened sourdough date graham crackers and creamy vanilla ice cream. The sourdough date graham crackers add a subtle caramel-like date flavor and a gentle sourdough tang, creating a more flavorful and less sugary treat than traditional ice cream sandwiches. - Prepare the crackers: Arrange 8 graham crackers on a parchment-lined tray or plate. These will be the bottoms of the sandwiches.
- Fill the sandwiches: Scoop about 1/4 cup of ice cream onto each cracker. Gently spread it into an even layer, leaving a small border around the edges.
- Top and press: Place the remaining 8 graham crackers on top. Press lightly until the ice cream reaches the edges.
- Freeze: Freeze the sandwiches for at least 1 hour, or until firm enough to handle and eat.
- Serve: Let the sandwiches sit at room temperature for 1–2 minutes before serving for the best texture.
