Smoky Chipotle Chili
Ready to warm your soul because this Smoky Chipotle Chili will do just that! It is so hearty and so delicious and I promise you won’t miss the beans because the sweet potato bites fill in and add a touch of sweetness to the smoky flavor of this chili. This hearty bowl is great way to get in veggies, lots of protein and immunity boosting bone broth too.
Ingredients
- 2 lb2 lb2 lb Ground Beef, I like Grass Roots Coop

- 1 cup1 cup1 cup Onion, diced
- 2 whole2 whole2 whole Bell Pepper, seeded and diced, I used yellow and green but any color works well
- 2 cups2 cups2 cups Diced Tomatoes, I used fresh but you can used canned

- 4 oz4 oz4 oz Green Chilies
- 16.9 oz16.9 oz16.9 oz Bone Broth, Chipotle Beef, I like Kettle & Fire, see note

- 1.5 cups1.5 cups1.5 cups Sweet Potato, peeled and diced
- 0.25 cup0.25 cup0.25 cup Tomato Paste

- 2 tsp2 tsp2 tsp Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 2 tsp2 tsp2 tsp Garlic Powder

- 2 tsp2 tsp2 tsp Smoked Paprika, must be smoked to add that smoky goodness
- 2 tsp2 tsp2 tsp Cumin, Ground

- 2 tsp2 tsp2 tsp Chili Powder

- 0.25 cup0.25 cup0.25 cup Cilantro, fresh, chopped

- 1 whole1 whole1 whole Lime, 1/2 juiced into pot and half sliced for garnish

- 1 whole1 whole1 whole Avocado, sliced for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add ground beef and onions to a large pot, breaking apart beef and cooking till no longer pink
- Add sweet potatoes, peppers, tomatoes, green chilis , tomato paste and broth, stirring well
- Simmer on medium low for 15 minutes
- Add all of the spice and fresh cilantro, simmer another 10 minutes
- Serve and garnish with lime slices and avocado
- Enjoy!
Notes
You can use beef broth instead of the chipotle broth and add 2 tsp of chipotle spice to the recipe or more to taste.
