Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a skillet, saute peppers, onion, & corn for 8-10 minutes.
  2. while veggies are sauteing, in a large mixing bowl, peel, deseed, and mash avocados.
  3. add the remaining ingredients to the avocados.
  4. refrigerate guacamole & allow veggies to cool.
  5. once cooled, fold veggies & cotija cheese into guacamole.
  6. refrigerate for up to 4 days.
  7. serve with a dipping vessel of choosing - my favs are salted radishes & siete dip chips!
