street corn guacamole
street corn dip + guacamole = street corn guacamole! a combo of 2 delicious mexican-inspired dips that are perfect for a cool, refreshing, & yummy summertime appetizer or side dish. my 2 favorite dipping vessels for guac are siete tortilla chips & salted radishes!
Ingredients
- 10 oz10 oz10 oz Frozen Bell Pepper and Onion Blend
- 111 Jalapeño, finely chopped
- 2 cup2 cup2 cup Frozen Corn
- 2 cup2 cup2 cup Avocado, ripe
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 0.5 bunch0.5 bunch0.5 bunch Cilantro, finely chopped
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 1 pinch1 pinch1 pinch Redmond Real Salt, to taste
- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes
- 4 oz4 oz4 oz Cotija Cheese, or queso fresco
- 111 Radish, for serving
- 111 Grain-Free Dip Chip - Siete Foods, for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a skillet, saute peppers, onion, & corn for 8-10 minutes.
- while veggies are sauteing, in a large mixing bowl, peel, deseed, and mash avocados.
- add the remaining ingredients to the avocados.
- refrigerate guacamole & allow veggies to cool.
- once cooled, fold veggies & cotija cheese into guacamole.
- refrigerate for up to 4 days.
- serve with a dipping vessel of choosing - my favs are salted radishes & siete dip chips!
