Not Your Momma’s Potato Salad
This potato salad is a combination of my Mom's recipe with some additions of mine. She was a great cook and had some great go to's for gatherings of family and friends. Key to really good flavor in this dish is to put all the ingredients together, except the potatoes, then add them when they are still warm.
Ingredients
- 1 lb1 lb1 lb Potatoes, Baby, diced
- 2 whole2 whole2 whole Green Onion (Scallion), diced

- 1 tsp1 tsp1 tsp Dill Relish
- 1 Tbsp1 Tbsp1 Tbsp Red Bell Pepper, Diced - very small
- 2 whole2 whole2 whole Eggs, Boiled, Diced
- 2 whole2 whole2 whole Celery, 2 stalks, finely diced, Dice some of the leaves as well
- 0.5 whole0.5 whole0.5 whole Lemon, Juice from 1/2 a lemon

- 2 Tbsp2 Tbsp2 Tbsp Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Yellow Mustard

- 1 tsp1 tsp1 tsp Dijon Mustard
- 3.5 oz3.5 oz3.5 oz Pancetta, cooked until crispy
- 1 tsp1 tsp1 tsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Dice potatoes and put in boiling water. Cook until tender, strain but do not rinse.
- Boil eggs, ( rolling boil for 5 minutes, remove from heat, cover and let sit for 15 mins. Replace water with cold water and ice to about 5 minutes). Peel and dice.
- Cook pancetta until crispy- drain and set aside.
- In a large bowl, add diced green onions ( white and green parts), diced red bell pepper, diced celery plus some of the diced celery leaves, dill relish, lemon juice, eggs, pancetta(once cooled) , mustard, mayo, dijon mustard. Add the drained potatoes ( still warm) and mix well. Salt and pepper to taste.
- Serve warm or refrigerate and serve cold. Either way, it's good ya'll!
