Sweet Italian Chicken Sausage and Rice
This recipe comes together pretty quickly and is very hearty, without being too heavy. All the good Italian flavors really complement each other and the rice is a nice change from pasta.
Ingredients
- 4 whole4 whole4 whole Chicken Sausage, I used fresh sweet italian chicken sausage links from Sprouts

- 4 oz4 oz4 oz Pancetta
- 1 whole1 whole1 whole Bell Pepper, Green - diced

- 1 whole1 whole1 whole Onion, Diced
- 2 cloves2 cloves2 cloves Garlic, Diced finely

- 10 oz10 oz10 oz Cannellini Beans, Rinsed
- 10 fl oz10 fl oz10 fl oz Diced Tomatoes, with basil and oregano
- 1 cup1 cup1 cup Vegetable Broth
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese, Shredded

- 1 cup1 cup1 cup Brown Rice, Cook per package directions

- 0.25 cup0.25 cup0.25 cup Pinot Grigio
- 1 tsp1 tsp1 tsp Thyme, Dried

- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 bunch1 bunch1 bunch Basil, Fresh, Diced

- 1 tsp1 tsp1 tsp Salt and Pepper
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Cook the rice per package directions. Set off stove.
- 2. In a large pan, brown the pancetta until crispy. Remove from the pan with a slotted spoon and set aside.
- 3. Add the chicken sausage to the same pan, brown until cooked through. Remove from the pan with a slotted spoon and set aside.
- 4. To that same pan, add the onions, green peppers and 1 tbsp butter. Sautee until soft.
- 5. Add the spices and garlic and stir well, then follow with the wine. Simmer for about 2-3 minutes.
- 6. Add the zucchini and broth. Mix well and let simmer for about 5 minutes.
- 7. Add the canned tomatoes, and cannellini beans, and rest of the butter. Cover and simmer for about 5-6 minutes.
- 8. Add the sausage and pancetta and mix well. Let simmer for about 5-8 minutes on low.
- 9. Add the cooked rice, mix well and top with the parmesan cheese. Cover, remove from the heat and serve with crusty bread.
