Ground Turkey and Vegetable Pasta
I used to make this for my kids when they were little and used cream of mushroom soup. Now, I use flour and butter for broth to make it and it is just as creamy and much healthier. Enjoy!
Ingredients
- 1 lb1 lb1 lb Ground Turkey

- 2 cups2 cups2 cups Elbow Macaroni Pasta

- 2 - 3 cups2 - 3 cups2 - 3 cups Chicken Broth, You can chicken or vegetable or a combo

- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted, more if you would like

- 0.5 whole0.5 whole0.5 whole Onion, Diced
- 3 whole3 whole3 whole Carrots, Diced
- 0.5 cup0.5 cup0.5 cup Peas, Green
- 1 clove1 clove1 clove Garlic, diced

- 2 tsp2 tsp2 tsp Thyme, Dried

- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese, shredded

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 3 Tbsp3 Tbsp3 Tbsp All Purpose Flour

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1.Add 1 Tbsp and 1 tbsp butter in a large pot. Add ground turkey and brown. Remove the turkey and set aside. Do not wipe out pan.
- 2. Add onion, carrots, garlic, salt and pepper and 1/2 the thyme to the pot with the turkey drippings. Saute until almost soft.
- 3. Add the flour and stir until all the vegetables are coated.
- 4. Add the broth, stir well and let simmer about 5-8 minutes.
- 5. Add the browned turkey and the pasta. Add more broth as needed so that there is enough to cook the pasta.
- 6. Add the rest of the butter and thyme. Stir well and cover. simmer about 5-8 mins
- 7. Add the peas, stir well and cover. Simmer another 5 minutes.
- Keep an eye on it and stir often so the pasta does not stick to the bottom. It takes about 10-12 mins total for the pasta to cook. You may need to add more broth or some water to be sure there is enough liquid.
- 8. Once the pasta is cooked, add the parm cheese, cover and remove from heat. Let sit for about 5 minutes and serve with bread and a salad.
