This Teriyaki Pork Stir Fry with Pineapple is loaded with tender bites of pork loin combined with sweet pineapple and crisp peppers all in a tangy teriyaki sauce making this the most delicious bowl full! It comes together all in one pan and is guaranteed to make everyone at the table happy! It is hearty on its own but you could also make a simple fried rice or cauliflower rice to have with it.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pat the pork loin dry with paper towels and cut into bite sized pieces
  2. Prepare the vegetables and pineapple
  3. Heat coconut oil in a large frying pan
  4. Add pork and cook till browning, about 6-7minutes
  5. Meanwhile, combine sauce ingredients in a bowl and whisk well
  6. Add peppers, onions and pineapple to the pan cooking about 3-5 minutes or until peppers begin to soften
  7. Pour sauce into the pan, add salt and pepper and stir well to combine
  8. Allow sauce to thicken a few minutes
  9. Remove from heat and stir in green onions and sesame seeds
  10. Enjoy!

Notes

You can use premade minced garlic and ginger root.  Trader Joes's makes both and can be found in their frozen food aisle.
