W30 Hidden Veggie Tailgate Chili
Who says game day recipes need to be made of fake cheese and processed junk?! This w30 hidden veggie tailgate chili is loaded with the good stuff and nobody has to know!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 28 oz28 oz28 oz Crushed Tomatoes
- 2 cups2 cups2 cups Carrots, chopped
- 2 cups2 cups2 cups Cauliflower, riced
- 111 Red Bell Pepper, chopped
- 111 Onion, chopped
- 222 Sweet Potato, peeled and chopped
- 2 Tbsp2 Tbsp2 Tbsp Chili Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Garlic Powder
- .5 tsp.5 tsp.5 tsp Black Pepper
- .5 tsp.5 tsp.5 tsp Ground Cumin
- Sea Salt, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Saute the beef and the oil in your Instant Pot (using the saute feature) for 3-5 minutes.
- Add in the veggies and seasonings as well as the crushed tomatoes.
- Stir to combine and secure the lid and pressure valve.
- Press the "Chili" button and allow the chili to cook.
- Release the pressure valve once the cooking cycle is complete.
- Remove the lid and garnish with avocado, Whole30 compatible sour cream, fresh cilantro and chopped red onion if desired.
