Whole30 Asian Chopped Rotisserie Chicken Salad
This is the perfect healthy recipe for those nights where you are craving something healthy and nourishing, but do not have much planned. It is filled with delicious, refreshing flavors and will surely be your new go-to weeknight salad. This recipe was made in partnership with Erin from The Wooden Skillet. Ingredients
Asian Cashew Dressing
- 1 Tbsp1 Tbsp1 Tbsp Garlic, + 1 tsp, minced
- 1 cup1 cup1 cup Cashew Butter
- 1 Tbsp1 Tbsp1 Tbsp Fish Sauce, + 1 tsp
- 1/2 cup1/2 cup1/2 cup Coconut Aminos
- 1/2 cup1/2 cup1/2 cup Water
- 1 tsp1 tsp1 tsp Lime Juice, freshly squeezed
Chopped Salad
- 111 Whole Chicken, (rotisserie chicken)
- 111 Mango, use vegetable peeler to peel into ribbons
- 4 cups4 cups4 cups Green Cabbage
- 2 cups2 cups2 cups Cabbage, (purple cabbage)
- 1 cup1 cup1 cup Green Onion (Scallion), chopped
- 2 cups2 cups2 cups Cilantro
- 111 Lime, sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Dressing
- Combine ingredients in medium mixing bowl and whisk until fully incorporated. Add additional water, 1 Tablespoon at a time, if you want a less thick consistency.
Salad
- Place green cabbage, carrots, mango ribbons and purple cabbage into bowls. Add green onion, cilantro, cashews and lime. Top with chicken. Serve with dressing.
