Broccoli Crunch Salad
This Broccoli Crunch Salad has been updated and even better than the original Broccoli Cauliflower Apple Walnut Salad that you may remember it by. It is the perfect salad to make a day or two ahead to take to any barbecue gatherings or back yard parties! It is bursting with flavor and crunch from the broccoli, cauliflower, apples and walnuts and has a bit of tang from the cranberries. The dressing comes together in minutes and is the perfect pairing for this salad. It makes a huge bowl full feeding at least 8-10 and you can easily cut the recipe in half if you want a smaller amount.
Ingredients
- 4 cups4 cups4 cups Broccoli, chopped
- 4 cups4 cups4 cups Cauliflower, chopped
- 2 pieces2 pieces2 pieces Celery, diced
- 0.5 cup0.5 cup0.5 cup Red Onion, diced
- 0.5 cup0.5 cup0.5 cup dried, unsweetened Cranberries
- 1 cup1 cup1 cup Organic Walnuts, raw, chopped
- 1 whole1 whole1 whole Pink Lady Apple, cored and diced
- 0.5 cup0.5 cup0.5 cup Garlic-Infused Olive Oil, or olive oil + 1 clove garlic minced
- 0.333 cup0.333 cup0.333 cup Avocado Oil Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Medjool Date Syrup
- 1 whole1 whole1 whole Lemon, juiced
- 1 Tbsp1 Tbsp1 Tbsp Coarse-Dijon Mustard (Noble Made)
- 1 tsp1 tsp1 tsp Salt, or more to taste
- 1 tsp1 tsp1 tsp Black Pepper

- In a small bowl, whisk the dressing ingredients and set aside
- In a large bowl combine all of the salad ingredients, tossing well
- Pour dressing over salad and toss well
