Dairy Free Cauliflower Soup
This Cauliflower Cheese Soup 2 Ways is sure to please everyone at your table! Enjoy the original version with crispy bacon crumbles OR spice it up and add some buffalo sauce! It's almost like buffalo cauliflower bites but in a creamy cozy bowl of soup! This soup is made with my Cashew Cheese sauce making it completely dairy free. It freezes well if you are lucky enough to have leftovers.
Ingredients
- 2 head2 head2 head Cauliflower, large heads, cut in florets
- 3 pieces3 pieces3 pieces Celery, diced
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 3 cloves3 cloves3 cloves Garlic, peeled & crushed
- 1 cup1 cup1 cup Raw Cashews, soaked in water 2 hours & drained
- 0.25 cup0.25 cup0.25 cup Nutritional Yeast
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 3 Tbsp3 Tbsp3 Tbsp Ghee
- 2 cups2 cups2 cups Organic Chicken Bone Broth, or chicken broth
- 13.5 oz13.5 oz13.5 oz Coconut Cream
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 6 - 8 pieces6 - 8 pieces6 - 8 pieces Bacon, cooked crisp & crumbled for garnish
- 0.5 cup0.5 cup0.5 cup Medium Buffalo Sauce, I like Noble Made

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt ghee in a large pot
- Add onions & celery & cook till soft
- Add garlic & stir one minute
- Add cauliflower & bone broth, cover & bring to a boil, lower & simmer till cauliflower is fork tender
- Meanwhile add drained cashews, lemon juice & nutritional yeast to high speed blender till creamy - add a little water if too thick
- Immersion blend cauliflower till creamy
- Add salt, pepper, coconut cream &
- Cheese sauce, stirring to combine
- Simmer on low 10 minutes
- Serve with crumbled bacon
