Garlic, Bacon, & Tomato Pasta
This recipe uses hearts of palm noodles, olive oil, and bacon to make an easy delicious dish. It's also Whole30 and Paleo compatible.
Ingredients
- 24 oz24 oz24 oz Hearts of Palm, angel hair noodles (I used Palmini), drained and rinsed
- .5 cup.5 cup.5 cup Olive Oil, (high quality)
- 10 cloves10 cloves10 cloves Garlic, cloves, thinly sliced
- 2 Tbsp2 Tbsp2 Tbsp Capers
- 5 pieces5 pieces5 pieces Bacon
- 10 oz10 oz10 oz Yellow Cherry Tomatoes
- .25 cup.25 cup.25 cup fresh Basil, chiffonade
- 1.5 tsp1.5 tsp1.5 tsp Sea Salt
- .25 tsp.25 tsp.25 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook the bacon until crispy*, roughly chop it, and set it aside.
- Fill a medium pot with water and bring to a boil.
- Add the drained and rinsed hearts of palm noodles and boil for about 5-7 minutes. Drain and set the noodles aside.
- In a large skillet on medium-low heat, add olive oil and garlic. Saute the garlic until it is soft and slightly brown but not burnt, about 2-3 minutes.
- Add the capers, tomatoes, lemon juice, sea salt, and pepper. Saute for 2-3 minutes.
- Toss in the pasta and crumbled bacon. Continue cooking for 4-5 minutes. Remove the pan from the heat.
- Add the basil and stir to combine everything thoroughly.
- Serve in bowls.
Notes
*Bacon can be cooked in the air fryer, oven, or a pan on the stovetop.
