Ombre Pitaya Chia Parfait
This parfait gets its pink from pitaya powder rather than anything artificial, and the ombre comes from three layers that get progressively pinker: a chia pudding that sets overnight, a light pink yogurt layer, and a darker frozen-banana smoothie blend. Build it in a glass from the bottom — chia pudding, granola, yogurt, then the smoothie layer — and pour gently so the colours stay in bands instead of marbling together.
