Vegan Mocha Banana Bread
This vegan mocha banana bread is a scrumptious twist on your classic banana bread! It’s vegan, naturally sweetened, and tastes like a rich, fudgy brownie! Perfect for a delicious treat, breakfast, or afternoon pick me up!
Ingredients
- 1 3/4 cup1 3/4 cup1 3/4 cup Spelt Flour
- 1/3 cup1/3 cup1/3 cup Cocoa Powder, unsweetened
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 2 tsp2 tsp2 tsp freshly ground Coffee, (instant coffee powder)
- 1 tsp1 tsp1 tsp Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- 1/4 tsp1/4 tsp1/4 tsp Salt
- 222 Flax Egg (1 tbsp ground flaxseed + 2.5 tbsp filtered water)
- 333 Banana, mashed
- 1/4 cup1/4 cup1/4 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F and line a loaf pan with two flaps of parchment paper.
- For flax eggs, combine 2tbsp ground flax with 5 tbsp water. Let sit 5 mins to "gel."
- In one bowl, mash bananas and then stir in all wet ingredients, including flax eggs.
- In another bowl, combine all dry ingredients except chocolate chips.
- Add dry ingredients to wet and stir until just combined.
- Fold in chocolate chips.
- Transfer batter to your prepared loaf pan and top with additional chocolate chips. Bake for 50-60 minutes or until toothpick comes out clean.
- Let cool in pan for 15 minutes and then transfer to a wire rack to cool completely!
