Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees Fahrenheit Conventional Oven or 325 degrees Fahrenheit Convection.
  2. Prepare a 9"x 13" baking dish, greased and lined with parchment paper.
  3. In a large mixing bowl, whisk together the wet ingredients: eggs, brown coconut sugar, date sugar, melted coconut oil, nutritional yeast and vanilla extract.
  4. In a separate bowl, mix all your dry ingredients: almond flour, tapioca flour, baking powder, chai tea, cinnamon, nutmeg, and salt. Give it a little whisk to make sure everything is evenly distributed. Pour the dry ingredients into the wet ingredients and stir until combined. It’ll smell like heaven already.
  5. Add the dry ingredients to the wet ingredients and mix well.
  6. Fold in the diced dried apples and toasted pecans. Mix until evenly incorporated.
  7. Spread the batter evenly into your prepared baking pan and pop it into the oven for about 15-18 minutes, or until the edges are golden and a toothpick comes out clean. Set aside to cool.
  8. While your bars cool, make that apple icing. In a small bowl, whisk together powdered sugar and apple juice until it’s smooth. Add in the cinnamon and a dash of salt. Make sure to mix well ensuring there are no lumps. Set the icing aside.
  9. After the bars have cooled to room temperature, unmold the bars. Run a knife along the edges to loosen them from the sides of the pan. Place onto a cutting board.
  10. Cut the edges of the bars on all four sides, roughly 1/4" from each side.
  11. Drizzle or spread the icing over your cooled apple bars.
  12. Next, cut the width (9" sides) of the bars into thirds, and length (13" sides) into quarters. You should have 12 bars after making the cuts.
  13. Cut each of the 12 bars diagonally, yielding 24 bars making triangles.
  14. Serve and enjoy!

How to Dice Apple Slices Lay out the dried apple slices: Place the dried apple slices flat on a cutting board. Ensure they are not overlapping for easier cutting. Stack the slices: If the slices are thin, stack 2-3 slices at a time to speed up the dicing process. Slice into strips: Using a sharp knife, cut the apple slices into thin strips, about 1/4 inch wide. Dice the strips: Rotate the strips 90 degrees, then cut them into small dice-sized pieces, around 1/4 inch cubes. Separate the pieces: Gently separate the diced pieces with your fingers to ensure they don’t stick together. How to Toast Pecans Prepare the Pecans: Spread the 1/2 cup of pecans in a single layer on a baking sheet. Toast the Pecans: Place the baking sheet in the preheated oven at 350 degrees, conventional and toast the pecans for 5-7 minutes. Keep a close eye on them, as they can go from perfectly toasted to burnt quickly! Stir Occasionally: About halfway through the toasting time, give the pecans a quick stir to ensure even toasting. Check for Doneness: The pecans are ready when they turn a golden brown color and give off a nutty aroma. Cool Down: Remove the pecans from the oven and let them cool completely before chopping them for your recipe. Toasted pecans will crisp up as they cool.
