Cajun Shrimp
Ready to spice up your night? This Cajun Shrimp served over cauliflower rice and spinach just screams flavor! This shrimp is finished in 5 minutes. No joke! You will actually have to prepare your sides first because its that quick. The shrimp is tender and spicy and when paired with the cauliflower and spinach makes the perfect dinner. This shrimp would also be delicious served over a salad.
Ingredients
- 1 lb1 lb1 lb Raw Shrimp, cleaned and tails removed and pat dry
- 2 Tbsp2 Tbsp2 Tbsp Cajun Seasoning
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 12 oz12 oz12 oz Riced Cauliflower, frozen
- 5 oz5 oz5 oz Baby Spinach
- 2 Tbsp2 Tbsp2 Tbsp Ghee
- 0.5 cup0.5 cup0.5 cup Chicken Broth (Low Sodium)
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 whole1 whole1 whole Lime, cut in wedges for garnish
- 0.25 cup0.25 cup0.25 cup Cilantro, chopped for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium saucepan melt ghee
- Add cauliflower rice, cook 5 minutes
- Add chicken broth, salt and spinach
- Stir and cook till wilted
- Meanwhile heat oil in a sauté pan over medium heat
- Add spice stirring constantly for 30 seconds
- Add shrimp to coat with spice
- Cook 2 minutes per side
- Serve over cauliflower spinach
- Garnish with lime wedges & fresh cilantro
