i used cookies & cream protein powder in my fudgy brownie cups, then filled them with a fluffy cookies & cream mousse & topped them with—you guessed it—even more cookies & cream cookies.

- Sugar-Free White Chocolate Chips, sub for chocolate chips in brownie recipe

cookies & cream protein mousse
- 1 cup1 cup1 cup Cottage Cheese
- 1 cup1 cup1 cup Sugar-Free White Chocolate Chips, melted & cooled

- 1/2 cup1/2 cup1/2 cup Prime Protein, Cookies & Cream - Equip Foods

- 1/2 cup1/2 cup1/2 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/2 tsp1/2 tsp1/2 tsp Vanilla Finishing Salt - Texas Salt Co.

- Dunkies Chocolate & Creme Cookies, Vanilla - ChocZero, for mousse + extra for sprinkling on top

protein brownie bites
- preheat oven to 350.
- follow my instructions for making protein brownie bites.
- using a medium cookie scoop, add a scoop of protein brownie batter to a mini silicon muffin tin.
- bake for ~28-30 minutes or until a toothpick comes out clean.
- press down the center of each brownie bite to create a divot for the cookies & cream protein mousse.
cookies & cream protein mousse
- to a food processor, add cottage cheese & puree.
- transfer to a bowl, then add remaining ingredients & using a hand mixer, mix until fluffy.
- refrigerate until brownies are completely cooled.
filling your brownie cups
- fill each brownie divot with cookies & cream protein mousse + extra “oreo” type cookies on top.
