Easy Slow Cooker Mediterranean Meatball Minestrone Stew
This easy pour-and-go slow cooker recipe takes ordinary prepared meatballs (fresh or frozen; regular, chicken or plant-based) and healthy vegetables and transforms them into a hearty, vibrant stew perfect for any day of the week.
Ingredients
- 1 whole1 whole1 whole Mediterranean Inspired Flavor Starter Sauce - Mesa de Vida, 1 whole bottle
- 12-16 oz12-16 oz12-16 oz Meatballs, cut in half if desired (fresh or frozen, regular pork or chicken, or plant-based versions) we used Aidell's chicken Italian meatballs for this recipe
- 1 cup1 cup1 cup Bell Pepper, chopped
- 13 oz13 oz13 oz Crushed Tomatoes, or diced
- 13 oz13 oz13 oz Chickpeas, or garbanzo beans, rinsed and drained
- 2 cups2 cups2 cups Bone Broth, flavor of choice
- .25 tsp.25 tsp.25 tsp Salt, to taste
- 2 cups2 cups2 cups Baby Spinach, packed
- 1 cup1 cup1 cup Green Beans, canned chopped, or thawed frozen, green beans (you can also use fresh green beans, if you do add them at the beginning of the recipe)
- .25 cup.25 cup.25 cup Israeli Couscous, or ditallini or orzo pasta
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Parmesan Cheese, grated, optional for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the Mesa de Vida starter sauce, meatballs, bell pepper, tomatoes, beans, broth and salt to the slow cooker. Stir and cover. Cook on low for 4-6 hours.
- Stir in the spinach, green beans and couscous; cover and cook for 20 more minutes.
- Serve with parmesan cheese if desired, and enjoy!
