Korean Beef
This Korean Beef Is David's favorite recipe and every single time he sees me grabbing ground beef from the freezer he does a happy dance and says "Korean Beef tonight?" The flavor is so incredible and and it comes together in no time! So many options how to serve this too! Over cauliflower rice, baked sweet potato rounds to make sliders or even over stir fried veggies! No matter how you serve it I promise you will coming back to make this one over and over again!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 2 Tbsp2 Tbsp2 Tbsp Sesame Oil
- 0.75 cup0.75 cup0.75 cup Coconut Aminos, see note
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 3 cloves3 cloves3 cloves Garlic, minced
- 1 tsp1 tsp1 tsp Ginger Root, minced
- 0.5 tsp0.5 tsp0.5 tsp Gochugaru (Korean chili pepper flakes)
- 4 whole4 whole4 whole Medjool Dates, soaked & pureed
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder
- 3 pieces3 pieces3 pieces Green Onion (Scallion), sliced for garnish
- 1 Tbsp1 Tbsp1 Tbsp Sesame Seeds, for garnish

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix in a small bowl, coconut aminos, onion, garlic, ginger, date puree and chili pepper flakes and set aside.
- Brown beef in sesame oil and drain liquid.
- Whisk arrowroot into coconut aminos mixture and add to pan stirring in well.
- Simmer 10 minutes or until liquid is absorbed and sauce is thickened.

Notes
Can actually use 1/2 cup coconut aminos for a milder flavor.

Just made this again. It never fails to please. Perfect for those nights when you want a quick, healthy, comforting meal. I subbed Chili flakes for Gochugaru with no complaints. I always make this in my IP and it turns out perfect.
