no-bake protein snickers ice cream bars… because snickers + ice cream was already elite, but we had to make it a little better. 🍫🥜✨ these bars have everything you love about a classic snickers ice cream bar—creamy peanut butter ice cream, rich caramel, crunchy peanuts, & fudgy chocolate—just transformed into a protein-packed, better-for-you freezer treat. the best part? no baking required. just layer, freeze, slice, & enjoy whenever the ice cream craving hits. a simple, indulgent freezer dessert that’s packed with flavor & made with nutrient-dense ingredients.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

base

  1. in a food processor, add pb puffs + monk fruit & blitz into powder.
  2. add softened peanut butter + water to crust & mix well.
  3. to a lined 8X8 baking dish, add crust mixture to the bottom & spread out evenly.

peanut butter “nougat” cottage cheese ice-cream

  1. make a batch of my cottage cheese ice-cream, using peanut butter protein powder.
  2. melt marshmallows, allow to slightly cool, then blend in with ice-cream.
  3. pour on top of base & freeze until set before adding next layer.

protein caramel + peanuts

  1. in a sauce pan over medium heat, melt butter & brown.
  2. stir in remaining “protein caramel” ingredients & mix until everything is dissolved.
  3. remove from heat & allow to cool.
  4. if your peanuts/sacha inchi nuts aren’t roasted, pop in the oven at 300 for 8-10 minutes.
  5. mix roasted nuts into caramel, then pour over ice-cream layer.
  6. freeze until ganache is ready.

chocolate collagen ganache

  1. melt chocolate chips, then mix in chocolate collagen peptides, & water until reaches a nice fudgy consistency.
  2. add a layer of ganache on top of caramel, then freeze for at least 4 hours or until completely set.
  3. once completely set, cut into bars & enjoy!
