- 1/4 cup1/4 cup1/4 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/4 cup1/4 cup1/4 cup Peanut Butter

- 2-42-42-4 Water, as needed
peanut butter “nougat” cottage cheese ice-cream
- cottage cheese ice-cream (click for recipe)
- 1/2 cup1/2 cup1/2 cup Prime Protein, Peanut Butter - Equip Foods, use for protein powder in cottage cheese ice-cream

- 1/4 cup1/4 cup1/4 cup Classic Vanilla Sugar-Free Marshmallow - Max Sweets, melted
protein caramel + peanuts
- 1/4 cup1/4 cup1/4 cup Butter, Unsalted

- 2 Tbsp2 Tbsp2 Tbsp Peanut Butter

- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 cup1/2 cup1/2 cup Vanilla Collagen Peptides Powder - Further Food, or flavor of choice

- 1 tsp1 tsp1 tsp Vanilla Finishing Salt - Texas Salt Co., or 1 T of chocolate caramel LMNT

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/2 tsp1/2 tsp1/2 tsp Organic Maple Extract, or caramel extract
- 1/2 cup1/2 cup1/2 cup Sacha Inchi Nuts - Imlak'esh Organics, or peanuts, roasted
chocolate collagen ganache
- 1/2 cup1/2 cup1/2 cup Sugar-Free Dark Chocolate Chips

- 1/2 cup1/2 cup1/2 cup Chocolate Collagen - Further Food

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Water, as needed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
base
- in a food processor, add pb puffs + monk fruit & blitz into powder.
- add softened peanut butter + water to crust & mix well.
- to a lined 8X8 baking dish, add crust mixture to the bottom & spread out evenly.
peanut butter “nougat” cottage cheese ice-cream
- make a batch of my cottage cheese ice-cream, using peanut butter protein powder.
- melt marshmallows, allow to slightly cool, then blend in with ice-cream.
- pour on top of base & freeze until set before adding next layer.
protein caramel + peanuts
- in a sauce pan over medium heat, melt butter & brown.
- stir in remaining “protein caramel” ingredients & mix until everything is dissolved.
- remove from heat & allow to cool.
- if your peanuts/sacha inchi nuts aren’t roasted, pop in the oven at 300 for 8-10 minutes.
- mix roasted nuts into caramel, then pour over ice-cream layer.
- freeze until ganache is ready.
chocolate collagen ganache
- melt chocolate chips, then mix in chocolate collagen peptides, & water until reaches a nice fudgy consistency.
- add a layer of ganache on top of caramel, then freeze for at least 4 hours or until completely set.
- once completely set, cut into bars & enjoy!
