strawberry shortcake “fried” protein ice-cream bites
fried ice cream season continues (check out the churro version)… but this time we’re going strawberry shortcake (thanks to those delicious B.T.R. nation bars). 🍓🍨✨
these taste just like those nostalgic strawberry shortcake ice cream bars, but with a protein-packed glow up.
Ingredients
strawberry ice-cream
- cottage cheese ice-cream (click for recipe)
- 1/2 cup1/2 cup1/2 cup Prime Protein, Strawberry - Equip Foods, use for protein powder in ice-cream

"fried" strawberry shortcake
- 222 Strawberry Shortcake Superfood Bar - B.T.R. Nation

- 0.5 cup0.5 cup0.5 cup Freeze-Dried Strawberries

- 0.25 cup0.25 cup0.25 cup Sugar-Free White Chocolate Chips

- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Coconut Oil, or butter, melted

- Sugar-Free White Chocolate Chips, melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my instructions for cottage cheese ice-cream, using the strawberry protein powder.
- pour into a small container & freeze.
- at about the 2-3 hour mark, scoop into balls, then store in the freezer overnight.
- to a food processor, add BTR bars, strawberries, & white chocolate chips, monk fruit, & sea salt; blitz a few times into a crumble.
- transfer shortcake crumble to a bowl, then mix with melted coconut oil or butter.
- get your ice-cream balls out of the freezer, then roll-in the “fried” strawberry shortcake mixture & place on a sheet pan.
- option to drizzle with melted white chocolate chips.
- freeze bites for at least 1 hour (keep stored in the freezer) & enjoy!
