Sheet Pan Fajita Chicken Meal (Whole30)
Cooking sheet pan meals needs to be a regular thing in my life. Every time I look a scrumptious sheet pan meal, I mentally kick myself for not making them enough. I mean what can be easier than throwing protein, veggies and tons of seasonings( yes seasonings are non negotiable) on a sheet pan, pop it in the oven and not having to baby sit it and watch it's every move. The fajita sauce from Saucy Lips really elevates this Chicken Fajita meal. The authentic Mexican flavors are a delight!
Ingredients
- 2 lb2 lb2 lb Boneless Skinless Chicken Thigh, or Chicken Breast
- 2 whole2 whole2 whole Bell Pepper, Use colors of your choice
- 1 whole1 whole1 whole White Onion
- 1 whole1 whole1 whole Saucy Lips Classic Fajita Sauce
- 2 whole2 whole2 whole Jalapeño, sliced
- 0.25 cup0.25 cup0.25 cup Cilantro, chopped
- 1 whole1 whole1 whole Lemon, cut into wedges

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop the chicken into strips and mix 3/4 of the seasoning into it
- Let it marinate in the refrigerator for about 30 mins. You can skip this step if you are in a hurry
- Chop peppers and onions into strips.
- Add the seasoned chicken and the veggies on a sheet pan. Pour and mix the remaining seasoning into the veggies
- Bake at 400F for 30 mins.
- Top with jalapeno, cilantro and lemon juice. Serve with a side of avocado slices !
